Ingredients
  

  • 1 – 3 to 4 pounds (1.3-1.8 kg) whole chicken, cut into 8 pieces
  • 2 tablespoons (28 grams) olive oil
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 teaspoons (3.15 grams) ground ginger
  • 1 teaspoon (1.57 grams) turmeric
  • 1 teaspoon (1.57 grams) ground cinnamon
  • 1/2 teaspoon (2.84 grams) paprika
  • 1/2 teaspoon (2.84 grams) ground nutmeg
  • 1 – 14.5 ounce can (400 grams) diced tomatoes
  • 1 – 14.5 ounce can (400 grams) chickpeas, drained and rinsed
  • 1 cup (240 grams) olives, pitted
  • 1 preserved lemon, peeled and sliced
  • 1/4 cup (31 grams) raisins
  • 2 cups (475 ml) low-sodium chicken broth
  • 3 tablespoons (24.84 grams) honey
  • 1/4 cup (31 grams) chopped cilantro
  • 1/4 cup (31 grams) chopped parsley

Instructions
 

  • Pat the chicken dry and season with salt and pepper. Heat the olive oil in a tagine pot or large Dutch oven over medium-high heat. Working in batches if needed, add the chicken pieces skin-side down. Cook until the skin is browned, about 5 minutes per side. Transfer browned chicken pieces to a plate.
  • Reduce the heat to medium and add the onions and garlic to the pot. Cook for 5 minutes, stirring often, until the onions are softened. Add the ginger, turmeric, cinnamon, paprika, and nutmeg and cook for 1 minute until fragrant.
  • Stir in the tomatoes and their juices, chickpeas, olives, preserved lemon, raisins, chicken broth, honey, half the cilantro, and half the parsley. Bring to a gentle boil.
  • Nestle the browned chicken pieces into the sauce in an even layer, moving them around so they are mostly submerged. If needed, add a bit more broth so most of the chicken is covered.
  • Partially cover the pot and gently simmer for 45-60 minutes. Baste the chicken with the sauce every 15 minutes until the chicken is very tender and easily pulls away from the bone.
  • Taste and season with more salt and pepper if needed. Garnish Moroccan Chicken Tagine with the remaining cilantro and parsley.
    Serve warm with couscous or rice. Enjoy!
